February 19, 2007 ~ Snow, Squash, and Sunset
Monday.
Saturday, February 17th "In the Life":
on a hike
Guess who is feeling much better.
On our hike Saturday, we visited the old well up on Suicide Ridge that used to supply water for all of campus. We cut through the woods up to the peak, then followed the ridge out to Dogwood Pasture. On our way through the pines nearing that open expanse, it started to snow.

Home again, Morgan fixed stuffed acorn squash for dinner.
I cannot share the recipe, unfortunately, because Morgan rarely uses a recipe. If you're feeling adventurous, though, he cooked a batch of short grain white rice, then he seasoned it with red pepper and a "Moroccan Rub" put out by "The Spice Hunter" which has tumeric, cinnamon, cumin, fennel, peppermint, clove, mace, basil, and cayenne. He added raisins and crushed almonds (hold back some of the almonds to top it with). He cut the squash in two and put a pat of butter in the cup of each half, then mounded rice into it. (To his rice, he added a little pork). He prepared a glaze by combining brown sugar, cinnamon, and orange juice into a thin liquid, then poured it over the halves. He sprinkled each with crushed almonds. Baked at 350 degrees Fahrenheit for about an hour.
It was really good.
Some of you asked for the recipe for the roasted Brussels sprouts I made. I generally followed this recipe, though we didn't have any lemon pepper seasoning so I used lemon juice and cracked peppercorns instead. Next I want to try Balsamic Roasted Brussels Sprouts.

Sunday, after spending the day doing paperwork for the wolf and wolfdog rescue, we spent the evening at our friend Joel's house. Grove loves to play with Joel's two little Shih Tzus, though he's not quite sure what to make of such tiny dogs, what with our two giants at home. He says "Doe-gee?" at them like a question, rather than a statement. (He did the same thing the first few times he encountered cats).
Monday, February 19th "In the Life" picture:
Today was a busy day of errands. The sunset was beautiful, though, as we went into the discount grocery to shop for food. After a few weeks of bitter cold, the weather is turning warm again. We're feeling spring for the first time this season.
